Ingredients

  • 8 large Eggs
  • 0.5 cup Milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Diced bell peppers
  • 0.5 cup Chopped cooked bacon or ham
  • 0.25 cup Diced onion
  • 0.5 cup Chopped spinach
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Spray a 12-cup muffin tin generously with non-stick cooking spray to prevent sticking.

Step 3

Crack the eggs into a large mixing bowl and add the milk, salt, and black pepper. Whisk until the mixture is well combined and slightly frothy.

Step 4

Prepare your fillings: chop and measure the bell peppers, bacon or ham, onion, and spinach. Grate the cheese if needed.

Step 5

Distribute the cheese and your chosen fillings evenly into the muffin tin cups. Feel free to mix and match ingredients for variety in each cup.

Step 6

Pour the egg mixture into each muffin cup, filling them about three-quarters full. Stir gently with a fork to ensure the fillings are evenly dispersed.

Step 7

Place the muffin tin on the middle rack of the preheated oven and bake for 18-20 minutes, or until the omelet cups are set and slightly golden around the edges.

Step 8

Remove from the oven and allow the omelet cups to cool in the tin for 5 minutes before carefully running a knife around the edges to release them.

Step 9

Serve immediately or let them cool completely before storing in an airtight container in the refrigerator for up to 4 days.

Step 10

Reheat in the microwave for 20-30 seconds to enjoy a warm, on-the-go breakfast!
