Ingredients

  • 8 large eggs
  • 0.25 cup milk
  • 0.5 cup, diced ham
  • 0.5 cup, shredded cheddar cheese
  • 0.25 cup, diced red bell pepper
  • 2 stalks, finely sliced green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0 as needed non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lightly spray a standard 12-cup muffin tin with non-stick cooking spray to prevent sticking.

Step 3

In a medium mixing bowl, whisk together the eggs and milk until well combined.

Step 4

Add the diced ham, shredded cheddar cheese, diced red bell pepper, sliced green onions, salt, and black pepper to the egg mixture. Stir everything together until evenly distributed.

Step 5

Pour the mixture into the prepared muffin tin cups, filling each about 3/4 of the way full.

Step 6

Carefully transfer the muffin tin to the preheated oven. Bake for 18-20 minutes, or until the frittatas are puffed up and set in the center.

Step 7

Remove the muffin tin from the oven and let the frittatas cool for a few minutes before carefully running a knife or spatula around the edges to release them.

Step 8

Serve warm, or let them cool completely and store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave as needed.
