Ingredients

  • 1 lb Ground beef (80/20 blend)
  • 2 tbsp Chipotle peppers in adobo sauce, finely chopped
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 12 pcs Brioche slider buns
  • 6 pcs Cheddar cheese slices, quartered
  • 6 pcs Romaine lettuce leaves
  • 1 tbsp Vegetable oil
  • 4 pcs Roma tomatoes, roasted and diced
  • 4 pcs Garlic cloves, roasted and mashed
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Brown sugar
  • 2 tbsp Tomato paste
  • 0.5 tsp Salt (for the catsup)
  • 0.5 tsp Smoked paprika

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

In a large bowl, combine ground beef, finely chopped chipotle peppers, garlic powder, onion powder, salt, and black pepper. Mix gently until well combined, being careful not to overwork the meat.

Divide the meat mixture into 12 equal portions and shape them into small patties about 2 inches in diameter.

Brush patties lightly with vegetable oil to prevent sticking and set aside.

To make the fire-roasted garlic catsup, combine roasted roma tomatoes, roasted and mashed garlic, apple cider vinegar, brown sugar, tomato paste, smoked paprika, and salt in a small saucepan.
