Ingredients

  • 1 lb Ground beef (80% lean)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 0.5 tsp Garlic powder
  • 12 pieces Slider buns
  • 1 cup Sharp cheddar cheese (shredded)
  • 4 oz Cream cheese (softened)
  • 0.25 cup Mayonnaise
  • 0.25 cup Pimentos (diced, drained)
  • 0.5 tsp Paprika
  • 2 stalks Green onions (thinly sliced, optional)
  • 2 tbsp Butter
  • 12 pieces Pickles (sliced, optional)

Directions

Step 1

In a large mixing bowl, combine the ground beef with salt, black pepper, and garlic powder. Mix gently until just combined, being careful not to overwork the meat.

Step 2

Divide the beef mixture into 12 equal portions and shape each portion into a small patty, slightly larger than the slider buns to account for shrinkage during cooking.

Step 3

Prepare the pimento cheese spread by combining the shredded cheddar cheese, softened cream cheese, mayonnaise, diced pimentos, paprika, and green onions (if using) in a medium bowl. Mix until smooth and creamy, then refrigerate until ready to use.

Step 4

Melt the butter in a large skillet over medium heat. Toast the slider buns cut-side down in the skillet until golden, about 1-2 minutes. Remove and set aside.

Step 5

In the same skillet or on a grill pan, cook the burger patties over medium-high heat for 2-3 minutes per side, or until they reach your desired level of doneness.

Step 6

Assemble the burgers by spreading a generous layer of pimento cheese on the bottom halves of the toasted slider buns. Place a cooked burger patty on each, followed by a pickle slice if desired. Top with the remaining bun halves.

Step 7

Serve the mini burgers immediately while warm. Enjoy!
