Ingredients

  • 120 ml Milk
  • 2 large Eggs
  • 75 g Unsalted butter
  • 300 g All-purpose flour
  • 40 g Granulated sugar
  • 5 g Salt
  • 7 g Active dry yeast
  • 1 brush application Egg wash (egg yolk + 1 tbsp milk)

Directions

Step 1

Add the milk, eggs, and softened unsalted butter into your bread machine pan.

Step 2

Add the all-purpose flour, granulated sugar, and salt to the pan, ensuring the salt and sugar are on opposite sides of the flour.

Step 3

Make a small well in the center of the flour and add the active dry yeast.

Step 4

Place the pan into the bread machine and select the 'Dough' setting. Press start and let the machine knead and proof the dough.

Step 5

Once the dough cycle is complete, transfer the dough to a lightly floured surface.

Step 6

Divide the dough into 12 equal pieces and shape each piece into a smooth ball.

Step 7

Place the dough balls into a greased muffin pan or silicone brioche molds.

Step 8

Cover the molds with a clean kitchen towel and let the dough rise for 30-45 minutes or until doubled in size.

Step 9

Preheat the oven to 180°C (350°F).

Step 10

Brush the risen dough balls with the egg wash for a golden finish.

Step 11

Bake in the preheated oven for 12-15 minutes or until the brioches are golden brown and sound hollow when tapped on the bottom.

Step 12

Remove the molds from the oven and allow the mini brioches to cool slightly before unmolding them.

Step 13

Serve warm or at room temperature. Store leftovers in an airtight container for up to 2 days.
