Ingredients

  • 1 pound Pork tenderloin
  • 0.5 cup Hoisin sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 1 teaspoon Ginger, freshly grated
  • 2 cloves Garlic, minced
  • 2 cups Napa cabbage, thinly sliced
  • 1 medium Carrot, shredded
  • 2 stalks Scallions, thinly sliced
  • 3 tablespoons Rice vinegar
  • 1 teaspoon Sesame oil
  • 2 tablespoons Mayonnaise
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 4 pieces Sandwich rolls or baguettes

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Trim the pork tenderloin of any silver skin and excess fat.

Step 3

In a small bowl, whisk together hoisin sauce, soy sauce, honey, grated ginger, and minced garlic.

Step 4

Place the pork tenderloin on a baking sheet lined with foil and brush liberally with the hoisin mixture, reserving a few tablespoons for later glazing.

Step 5

Bake the pork tenderloin in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Brush with the reserved hoisin mixture halfway through cooking.

Step 6

While the pork is cooking, prepare the Napa slaw. In a large bowl, combine sliced Napa cabbage, shredded carrot, and scallions.

Step 7

In a separate small bowl, whisk together rice vinegar, sesame oil, mayonnaise, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine. Adjust seasoning if necessary and set aside.

Step 8

Once the pork has finished cooking, remove it from the oven and let it rest for 5-10 minutes before slicing thinly.

Step 9

Lightly toast the sandwich rolls or baguettes, if desired.

Step 10

Assemble the sandwiches by layering slices of the hoisin-glazed pork on the bottom halves of the rolls. Top with a generous portion of the Napa slaw, then place the top halves of the rolls on to complete the sandwiches.

Step 11

Serve immediately and enjoy your flavorful Hoisin Pork Tenderloin Sandwiches with Napa Slaw.
