  • 15 ounces cannellini beans (canned, drained and rinsed)
  • 15 ounces kidney beans (canned, drained and rinsed)
  • 2 cups kale or spinach, chopped
  • 1 cup small pasta (such as ditalini or elbow)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon crushed red pepper flakes (optional)
  • 0 to taste Parmesan cheese, grated (for garnish)
  • 0 to taste fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large soup pot or Dutch oven over medium heat.

Step 2

Add the Italian sausage, breaking it into small crumbles with a wooden spoon. Cook until browned, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.
