  • 3 links Italian sausage
  • 1 large yellow onion
  • 3 medium carrots
  • 2 medium celery stalks
  • 1 medium zucchini
  • 4 cloves garlic cloves
  • 28 ounces crushed tomatoes
  • 6 cups chicken broth
  • 15 ounces kidney beans
  • 15 ounces cannellini beans
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup small pasta
  • 2 cups baby spinach
  • 0.5 cup Parmesan cheese (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Dice the chicken breast into bite-sized pieces and slice the sausage into rounds. Add both to the pot and cook until lightly browned. Remove and set aside.
