  • 2 Celery stalks, diced
  • 1 cup Green beans, trimmed and chopped
  • 2 cups Cabbage, chopped
  • 1 14-ounce can Diced tomatoes (no salt added)
  • 6 cups Vegetable broth (low sodium)
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Parsley, chopped (fresh or dried)
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 2 cups Spinach or kale, chopped
  • 1 tablespoon Lemon juice (optional)

Directions

Step 1

Spray a large pot with olive oil spray and heat over medium heat.
