Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 3 cloves minced garlic
  • 1 14-ounce can diced tomatoes (canned, with juice)
  • 2 tablespoons tomato paste
  • 6 cups vegetable broth
  • 1 15-ounce can kidney beans (canned, drained and rinsed)
  • 1 15-ounce can cannellini beans (canned, drained and rinsed)
  • 1.5 teaspoons dried oregano
  • 1.5 teaspoons dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 bay leaf
  • 1 cup small pasta (e.g., ditalini or macaroni)
  • 2 cups fresh spinach, chopped
  • 0.25 cup grated Parmesan cheese (optional, for topping)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.

Step 3

Stir in the zucchini, green beans, and minced garlic. Cook for an additional 3 minutes.

Step 4

Add the diced tomatoes with their juice, tomato paste, and vegetable broth. Stir well to combine.

Step 5

Pour in the kidney beans and cannellini beans. Add the oregano, basil, salt, black pepper, and bay leaf.

Step 6

Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for 20 minutes.

Step 7

Add the pasta and cook until tender, about 8-10 minutes, stirring occasionally to prevent sticking.

Step 8

Stir in the chopped spinach and cook for another 1-2 minutes until wilted.

Step 9

Remove the bay leaf and adjust seasonings, if necessary.

Step 10

Serve hot, topped with grated Parmesan cheese if desired.
