Ingredients

  • 1 cup unsalted butter
  • 0.75 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 2 large egg
  • 2 teaspoons vanilla extract
  • 2.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 1 cup prepared mincemeat
  • 1.5 cups powdered sugar
  • 3 tablespoons brewed coffee, cooled
  • 1 tablespoon unsalted butter (for icing)
  • 1 tablespoon milk (optional, for adjusting icing consistency)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together 1 cup of unsalted butter, 0.75 cups of granulated sugar, and 0.5 cups of packed brown sugar using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the eggs, one at a time, beating well after each addition, then mix in 2 teaspoons of vanilla extract.

Step 4

In another bowl, whisk together 2.25 cups of all-purpose flour, 1 teaspoon of baking soda, 0.5 teaspoon of salt, 1 teaspoon of cinnamon, and 0.5 teaspoon of nutmeg.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 6

Fold in 1 cup of prepared mincemeat until evenly distributed in the dough.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops look slightly puffed.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

To prepare the coffee icing, whisk together 1.5 cups of powdered sugar, 3 tablespoons of cooled brewed coffee, and 1 tablespoon of melted unsalted butter in a medium bowl until smooth. If the icing is too thick, add milk a teaspoon at a time until it reaches your desired consistency.

Step 11

Once the cookies are completely cooled, drizzle the coffee icing over the top of each one using a spoon or a piping bag.

Step 12

Let the icing set for 10-15 minutes before serving. Enjoy your Mincemeat Cookies with Coffee Icing!
