  • 2 medium zucchini
  • 2 medium yellow squash
  • 3 medium carrots
  • 1 head broccoli

  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups cheddar cheese, shredded
  • 0.5 cups parmesan cheese, grated
  • 1 cup bread crumbs
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons dried thyme
  • 0.25 teaspoons paprika

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with cooking spray or butter.

Step 2

Wash all vegetables. Slice zucchini and yellow squash into 1/4-inch rounds. Peel and slice the carrots thinly. Chop broccoli and cauliflower into bite-sized florets. Dice the onion and mince the garlic.

Bring a large pot of salted water to a boil. Add the carrots, broccoli, and cauliflower. Blanch for 3-4 minutes, then transfer to an ice bath to stop the cooking process. Drain and set aside.
