Ingredients

  • 2 cups All-purpose flour
  • 3 tablespoons Granulated sugar (for shortcake)
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter (cold and cubed)
  • 0.75 cups Heavy cream (for shortcake)
  • 1 teaspoons Vanilla extract
  • 4 cups Fresh strawberries (hulled and sliced)
  • 0.25 cups Granulated sugar (for strawberries)
  • 1 cups Heavy cream (for whipped topping)
  • 2 tablespoons Powdered sugar
  • 0.5 teaspoons Vanilla extract (for whipped topping)

Directions

Step 1

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, 3 tablespoons granulated sugar, baking powder, and salt.

Step 3

Using a pastry cutter or your fingers, cut the cold cubed butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, mix the 3/4 cup heavy cream and 1 teaspoon vanilla extract. Gradually add this to the dry mixture, stirring gently until the dough just comes together.

Step 5

Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch-thick rectangle. Use a round biscuit cutter (or a glass) to cut out shortcake rounds.

Step 6

Place the rounds onto the prepared baking sheet. Brush the tops with a little heavy cream for a golden finish.

Step 7

Bake in the preheated oven for 12-15 minutes, or until the shortcakes are golden brown. Remove from the oven and let them cool slightly.

Step 8

While the shortcakes bake, prepare the strawberries. In a bowl, mix the sliced strawberries with 1/4 cup granulated sugar. Let them macerate for about 15 minutes until they release their juices.

Step 9

For the whipped topping, beat 1 cup heavy cream, powdered sugar, and 1/2 teaspoon vanilla extract in a chilled bowl until soft peaks form.

Step 10

To assemble, slice each shortcake in half horizontally. Place the bottom half on a plate, spoon some strawberries with their juices onto it, and add a dollop of whipped cream. Top with the other shortcake half and repeat the layers if desired.

Step 11

Serve immediately and enjoy your classic Mimi’s Shortcake!
