Ingredients

  • 4 cups Rhubarb (fresh, chopped into 1/2-inch pieces)
  • 1.25 cups Granulated sugar
  • 0.3333 cup All-purpose flour
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsalted butter (cold, cut into small cubes)
  • 2 crusts Premade pie crusts (or homemade, enough for a double crust)
  • 1 egg Egg (beaten, for egg wash)
  • 1 tablespoon Granulated sugar (for sprinkling)

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Prepare your pie crusts. If you're using a homemade crust, roll out the first crust and fit it into a 9-inch pie dish.

Step 3

In a large mixing bowl, combine the chopped rhubarb, granulated sugar, all-purpose flour, and salt. Stir until the rhubarb is evenly coated and the mixture is well combined.

Step 4

Pour the rhubarb filling into the prepared pie crust, spreading it out evenly.

Step 5

Dot the rhubarb filling with small cubes of the cold unsalted butter.

Step 6

Roll out the second pie crust and place it over the filling. Seal the edges by crimping or pressing them together, trimming any excess dough. Cut a few small slits in the top crust to allow steam to escape while baking.

Step 7

Brush the top crust with the beaten egg to create a golden finish, and sprinkle with granulated sugar for a touch of sparkle.

Step 8

Place the pie on the middle rack of the preheated oven. Bake for 50 minutes, or until the filling is bubbly and the crust is golden brown. You may want to place a baking sheet under the pie to catch any drips.

Step 9

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving. This allows the filling to set.

Step 10

Slice and serve Mimi’s Rhubarb Pie on its own or with a scoop of vanilla ice cream. Enjoy!
