Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Unsalted butter (cold, diced)
  • 1 tbsp Granulated sugar
  • 0.5 tsp Salt
  • 6 tbsp Ice water
  • 2 cups Pecans (chopped)
  • 1 cup Brown sugar (packed)
  • 1 cup Light corn syrup
  • 0.25 cup Unsalted butter (melted)
  • 2 tsp Vanilla extract
  • 3 Large eggs

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

Step 3

Add the diced cold butter to the dry ingredients and use a pastry cutter or your fingers to work it in until the mixture resembles coarse crumbs.

Step 4

Add ice water, 1 tablespoon at a time, mixing gently after each addition until the dough comes together without being sticky.

Step 5

Form the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes.

Step 6

On a lightly floured surface, roll the chilled dough out to about 1/8-inch thickness.

Step 7

Cut the dough into 12 circles large enough to fit into a standard muffin tin, pressing the dough circles into the wells of the tin to form mini pie crusts.

Step 8

Sprinkle chopped pecans evenly into the bottom of each pie crust.

Step 9

In a medium bowl, whisk together the brown sugar, light corn syrup, melted butter, vanilla extract, and eggs until smooth and well-blended.

Step 10

Carefully pour the filling over the pecans in each crust, filling each about 3/4 full to allow room for expansion as they bake.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the filling is set and slightly puffed, and the crust is golden brown.

Step 12

Remove from the oven and let the pies cool in the muffin tin for 10 minutes, then transfer them to a wire rack to cool completely.

Step 13

Serve the pies warm or at room temperature, optionally with whipped cream or vanilla ice cream. Enjoy!
