Ingredients

  • 2 cups Pumpkin puree (unsweetened)
  • 1 cup Evaporated milk
  • 2 Large eggs
  • 0.75 cup Brown sugar (packed)
  • 0.25 cup Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cloves
  • 0.5 teaspoon Salt
  • 1 Unbaked 9-inch pie crust
  • 0 Whipped cream (optional, for serving)

Directions

Step 1

Preheat your oven to 425°F (218°C).

Step 2

In a large mixing bowl, combine the pumpkin puree, evaporated milk, eggs, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, cloves, and salt. Whisk until smooth and thoroughly blended.

Step 3

Place the unbaked 9-inch pie crust into a pie dish, crimp the edges if desired, and pour the pumpkin filling mixture into the crust.

Step 4

Bake the pie at 425°F (218°C) for 15 minutes. Then reduce the oven temperature to 350°F (177°C) and continue baking for an additional 45 minutes, or until the center is set and a knife inserted near the center comes out clean.

Step 5

Remove the pie from the oven and allow it to cool completely on a wire rack. This will take about 2 hours.

Step 6

Serve slices with a dollop of whipped cream if desired. Refrigerate any leftovers in an airtight container for up to 3 days.
