Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 2 tablespoons Poppy seeds
  • 0.75 cups Milk
  • 0.25 cups Lemon juice
  • 2 tablespoons Lemon zest
  • 1 large Egg
  • 0.5 cups Unsalted butter, melted and slightly cooled
  • 1 teaspoons Vanilla extract
  • 0.5 cups Powdered sugar (optional for glaze)
  • 1.5 tablespoons Lemon juice (optional for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease each cup.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds until well combined.

Step 3

In a medium-sized bowl, whisk together the milk, lemon juice, lemon zest, egg, melted butter, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix with a spatula until just combined. Be careful not to overmix – the batter should be slightly lumpy.

Step 5

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Step 6

Bake in the preheated oven for 18-20 minutes, or until the tops are lightly golden and a toothpick inserted into the center of a muffin comes out clean.

Step 7

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Step 8

Optional: To make the glaze, whisk the powdered sugar and lemon juice together in a small bowl until smooth. Drizzle the glaze over the cooled muffins for an extra burst of lemony sweetness.

Step 9

Serve and enjoy your freshly baked Mimi's Lemon Poppy Seed Muffins with a cup of tea or coffee!
