Ingredients

  • 0.75 cups Unsalted butter
  • 0.75 cups Brown sugar, packed
  • 0.5 cups Molasses
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 3.25 cups All-purpose flour
  • 1.5 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Ground cloves
  • 0.25 teaspoons Ground nutmeg
  • 0.5 teaspoons Salt
  • 1 teaspoon Baking soda
  • 0 as desired Decorative icing or candies (optional)

Directions

Step 1

In a large mixing bowl, use an electric mixer to cream together the butter and brown sugar until light and fluffy, about 2-3 minutes.

Step 2

Add the molasses, egg, and vanilla extract to the bowl. Beat until the mixture is well-combined and smooth.

Step 3

In a separate medium-sized bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, ground nutmeg, salt, and baking soda until evenly mixed.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the dough comes together. Scrape down the sides of the bowl as needed.

Step 5

Divide the dough into two equal portions, pat each into a flat disk, and wrap in plastic wrap. Chill the dough in the refrigerator for at least 1 hour (or up to overnight).

Step 6

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

Step 7

Lightly flour your work surface and roll out one portion of the dough to about 1/4 inch thickness. Use gingerbread man cookie cutters to cut out shapes, transferring them to the prepared baking sheets with a spatula.

Step 8

Re-roll and cut any leftover dough scraps as necessary to maximize the number of cookies.

Step 9

Bake the cookies for 8-10 minutes, or until the edges are set but the centers are still soft. Be careful not to overbake.

Step 10

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.

Step 11

If desired, decorate the gingerbread men with icing or candies once they are fully cooled.

Step 12

Store the cookies in an airtight container at room temperature for up to 1 week or freeze for longer storage.
