  • 0.5 cup Raisins (optional)
  • 0.5 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or lightly grease it with baking spray.

In a large bowl, pour the boiling water over the wheat bran and let it sit for about 5 minutes to soften.

In a separate medium bowl, whisk together the buttermilk, vegetable oil, brown sugar, egg, and vanilla extract until well combined.
