Ingredients

  • 2 cups pitted dates
  • 1.25 cups water
  • 1 tablespoon lemon juice
  • 1.5 cups gluten-free rolled oats
  • 1 cup almond flour
  • 0.5 cup gluten-free all-purpose flour
  • 0.75 cup brown sugar
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup unsalted butter (cold, cubed)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving overhang for easy removal.

Step 2

In a medium saucepan, combine the pitted dates, water, and lemon juice. Cook over medium heat, stirring occasionally, until the dates break down and form a thick paste, about 10 minutes. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, combine the gluten-free rolled oats, almond flour, gluten-free all-purpose flour, brown sugar, baking soda, and salt.

Step 4

Add the cold, cubed butter to the oat mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Step 5

Press half of the oat mixture into the prepared baking pan to form an even crust. Gently press down with your hands or the back of a spoon to compact the layer.

Step 6

Spread the date filling evenly over the crust layer using a spatula.

Step 7

Sprinkle the remaining oat mixture over the date filling, gently pressing it down to form the top layer.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.

Step 9

Remove from the oven and allow the squares to cool completely in the pan on a wire rack. Once cooled, use the parchment overhang to lift the date squares out of the pan.

Step 10

Slice into 12 squares and serve. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
