Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Fine yellow cornmeal
  • 3 tablespoons Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 6 tablespoons Unsalted butter (cold, cut into cubes)
  • 0.5 cups Heavy cream (plus extra for brushing)
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Honey (optional, for drizzling)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, and salt.

Step 3

Add the cold butter cubes to the dry ingredients. Use a pastry cutter or your fingertips to work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a small bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 5

Make a well in the center of the dry ingredients and pour the wet mixture into it. Gently mix with a spatula until the dough just comes together. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface. Pat it into a circle about 1 inch thick.

Step 7

Use a knife or bench scraper to divide the dough into 8 triangles, like slicing a pizza.

Step 8

Transfer the scones to the prepared baking sheet, spacing them about 2 inches apart.

Step 9

Brush the tops of the scones with a little heavy cream to help them brown nicely in the oven.

Step 10

Bake for 14–16 minutes, or until the scones are golden and firm to the touch.

Step 11

Remove the scones from the oven and let them cool slightly on a wire rack.

Step 12

Optional: Drizzle the warm scones with a little honey before serving for extra sweetness.
