Ingredients

  • 4 medium (sliced thin) Yellow onions
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 6 cups Beef broth
  • 2 cups Chicken broth
  • 0.25 cup Dry sherry or white wine
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Sugar
  • 0.5 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 4 slices (toasted) French bread or baguette
  • 1.5 cups (shredded) Gruyere cheese or Swiss cheese
  • 0.25 cup (grated) Parmesan cheese

Directions

Step 1

Peel and thinly slice the yellow onions into uniform slices.

Step 2

In a large soup pot, heat the butter and olive oil over medium heat until melted and bubbly.

Step 3

Add the sliced onions to the pot, stir well to coat with the butter and oil, and cook for 25-30 minutes, stirring occasionally, until the onions are deeply caramelized and golden brown.

Step 4

Deglaze the pot by adding the sherry or white wine, stirring to scrape any stuck bits from the bottom of the pot.

Step 5

Add the beef broth, chicken broth, Worcestershire sauce, sugar, thyme, salt, and pepper. Stir to combine and bring to a simmer.

Step 6

Reduce the heat and let the soup simmer gently for 20 minutes, allowing the flavors to meld together.

Step 7

Preheat the oven to broil and prepare oven-safe bowls for serving.

Step 8

Ladle the soup into the bowls and top each with a slice of toasted French bread.

Step 9

Generously sprinkle shredded Gruyere or Swiss cheese on top of the bread, and add a small amount of Parmesan cheese to finish.

Step 10

Place the bowls on a baking sheet and transfer them to the oven. Broil for 3-5 minutes, checking frequently, until the cheese is melted, bubbling, and slightly browned.

Step 11

Carefully remove the bowls from the oven (they will be extremely hot), let cool slightly, and serve immediately.
