Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cloves
  • 0.25 teaspoon Salt
  • 2 Large eggs
  • 1 cup Buttermilk
  • 0.5 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 2 tablespoons Brown sugar, packed
  • 2 tablespoons Optional: Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or grease the cups lightly with cooking spray.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt until evenly combined.

Step 3

In a separate medium mixing bowl, whisk the eggs until lightly beaten, then add the buttermilk, vegetable oil, and vanilla extract. Stir until well combined.

Step 4

Create a well in the center of the dry ingredients and gradually pour the wet ingredients into it. Mix gently with a spatula or wooden spoon until just combined; do not overmix. The batter may be slightly lumpy, which is fine.

Step 5

Fold in the brown sugar gently, taking care not to overmix. This will create little pockets of sweetness in the muffins.

Step 6

Spoon the batter evenly into the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.

Step 8

Remove the muffin tin from the oven and let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Step 9

If desired, dust the tops of the muffins with powdered sugar before serving for an extra touch of sweetness.

Step 10

Serve warm or at room temperature and enjoy!
