Ingredients

  • 4 cups canned navy beans
  • 6 slices bacon, diced
  • 1 medium yellow onion, finely chopped
  • 1 cup ketchup
  • 0.25 cup light brown sugar, packed
  • 2 tablespoons molasses
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large, oven-safe skillet or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon using a slotted spoon and set it aside, leaving the rendered fat in the skillet.

Step 3

Add the chopped onion to the skillet and sauté for 5-7 minutes, or until softened and translucent.

Step 4

Stir in the ketchup, brown sugar, molasses, apple cider vinegar, Dijon mustard, garlic powder, smoked paprika, salt, and black pepper. Cook for 1-2 minutes until the mixture is well combined and heated through.

Step 5

Add the canned navy beans and water to the skillet and gently stir to coat the beans in the sauce.

Step 6

Return the cooked bacon to the skillet, stirring it into the beans.

Step 7

If your skillet is not oven-safe, transfer the mixture to a greased 9x13-inch baking dish.

Step 8

Cover the skillet or baking dish with foil and bake in the preheated oven for 60 minutes.

Step 9

After 60 minutes, remove the foil and continue baking for an additional 30 minutes, allowing the sauce to thicken and caramelize.

Step 10

Remove the dish from the oven and let it cool slightly before serving. Enjoy Mimi's Baked Beans as a standalone dish or as a flavorful side.
