Ingredients

  • 120 grams All-purpose flour
  • 100 grams Rolled oats
  • 50 grams Brown sugar
  • 150 grams Unsalted butter
  • 400 grams Sweetened condensed milk
  • 2 tablespoons Golden syrup (or light corn syrup)
  • 100 grams Granulated sugar
  • 200 grams Dark chocolate
  • 1 teaspoon Vegetable oil (optional, to soften chocolate top)

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a 9-inch (23 cm) square baking tin with parchment paper, leaving a bit of overhang to easily lift the squares out later.

Step 2

In a large mixing bowl, combine the flour, oats, and brown sugar. Melt 100 grams of butter and add it to the mixture. Stir until it forms a crumbly but cohesive dough.

Step 3

Press the dough evenly into the bottom of the prepared baking tin to form the base. Bake for 15 minutes, or until lightly golden. Remove from the oven and set aside to cool.

Step 4

To make the caramel layer, combine the sweetened condensed milk, golden syrup, granulated sugar, and 50 grams of butter in a medium saucepan. Cook over medium heat, stirring constantly to prevent burning, until the mixture thickens and turns a golden caramel color (about 8-10 minutes).

Step 5

Pour the hot caramel over the cooled base, spreading it evenly. Let it cool completely at room temperature or in the fridge until it sets.

Step 6

For the chocolate topping, melt the dark chocolate in a heatproof bowl set over a pot of simmering water (double boiler method) or in the microwave in 20-second intervals, stirring after each interval. If desired, stir in 1 teaspoon of vegetable oil for a softer finish.

Step 7

Pour the melted chocolate over the caramel layer, spreading it out evenly with a spatula. Allow it to set completely at room temperature or refrigerate until firm.

Step 8

Using the parchment paper overhang, lift the set shortbread out of the tin. Use a sharp knife to slice it into 16 squares or rectangles. Wipe the knife clean between cuts for neat edges.

Step 9

Serve and enjoy your Millionaire's Shortbread with its perfect combination of textures and flavors!
