Ingredients

  • 250 grams Unsalted butter
  • 100 grams Caster sugar
  • 300 grams Plain flour
  • 397 grams Condensed milk
  • 4 tablespoons Golden syrup
  • 100 grams Dark brown sugar
  • 200 grams Milk chocolate
  • 100 grams Dark chocolate

Directions

Step 1

Preheat your oven to 180°C (160°C fan) or 350°F and line a 9x9-inch square baking tin with parchment paper.

Step 2

To make the shortbread base, beat 150g of unsalted butter and caster sugar together until light and fluffy. Gradually mix in the plain flour until a crumbly dough forms.

Step 3

Press the dough firmly into the base of the prepared tin, smoothing it out evenly with the back of a spoon. Prick the dough all over with a fork to prevent bubbling.

Bake the shortbread for 20 minutes or until lightly golden. Remove from the oven and allow it to cool completely in the tin.

For the caramel layer, melt 100g of unsalted butter, golden syrup, dark brown sugar, and condensed milk in a medium-sized saucepan over low heat. Stir continuously until the sugar dissolves.

Raise the heat to medium and bring the mixture to a gentle boil, stirring constantly to prevent it from catching. Cook for about 5-7 minutes until the caramel thickens and takes on a golden-brown color.

Pour the hot caramel evenly over the cooled shortbread base and spread it out smoothly with a spatula. Let it cool completely at room temperature or in the fridge to set.
