Ingredients

  • 0.5 cups millet
  • 3 cups water
  • 2 tablespoons olive oil
  • 1 medium, finely chopped onion
  • 3 minced garlic cloves
  • 2 diced celery stalks
  • 2 medium, diced carrot
  • 1 medium, diced zucchini
  • 1 medium, diced tomato
  • 4 cups vegetable broth
  • 2 cups baby spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons, chopped parsley

Directions

Step 1

Rinse the millet under cold water and drain well.

Step 2

In a small saucepan, bring 3 cups of water to a boil and add the millet. Reduce the heat to low, cover, and simmer for 15 minutes or until the millet is cooked and the water is absorbed. Set aside.

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté for 3–4 minutes until soft and translucent.
