  • 6 pieces Large flour tortillas
  • 3 cups Shredded cheese (cheddar, Monterey Jack, or a blend)

  • 1 cup Sliced bell peppers
  • 1 cup Sliced onions

  • 0.25 cup Fresh cilantro, chopped
  • 1 tablespoon Taco seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Vegetable oil or butter
  • 1 cup Guacamole
  • 1 cup Sour cream
  • 1 cup Salsa

Directions

Step 1

In a skillet, heat 1 tablespoon of vegetable oil or butter over medium heat. Add the sliced bell peppers and onions. Sprinkle with taco seasoning, salt, and black pepper. Sauté until softened, about 5-7 minutes, then set aside.

Step 2

Spread a thin layer of refried beans on three of the tortillas. These will serve as the base for the layers.

Heat a large, non-stick skillet or griddle over medium heat. Lightly grease it with 1 tablespoon of vegetable oil or butter.
