  • 1 cup coconut milk
  • 1 cup chicken or vegetable stock
  • 2 tablespoons fresh cilantro (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces lime wedges (for serving)

Directions

Step 1

Heat the olive oil in a large, deep skillet or pot over medium heat.

Add the chopped onion and sauté for 3-4 minutes until softened and translucent.
