Ingredients

  • 1 pound mild Italian sausage
  • 2 tablespoons olive oil

  • 2 medium, diced carrots
  • 2 stalks, diced celery
  • 28 ounces (1 can) crushed tomatoes
  • 4 cups chicken stock
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon (optional) red pepper flakes
  • 2 tablespoons, chopped (optional) fresh parsley

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.

Add the mild Italian sausage to the pot and break it apart with a spoon. Cook until browned and fully cooked, about 5–7 minutes. Remove the sausage with a slotted spoon and set aside.
