  • 0.5 teaspoons Mustard seeds
  • 1 teaspoon Salt
  • 2 cups Water
  • 3 number Shallots (finely sliced)

Directions

Step 1

Peel and cube the yellow pumpkin into roughly 1-inch pieces. Set aside.

Step 2

In a blender, combine the fresh grated coconut, cumin seeds, and green chilies. Add 2-3 tablespoons of water and grind to a smooth paste. Set aside.

Step 3

In a medium-sized pot, add the cubed yellow pumpkin along with 2 cups of water, turmeric powder, and salt. Bring to a boil, then reduce the heat and let it simmer until the pumpkin is tender but not mushy (about 10-12 minutes).
