  • 400 grams canned chopped tomatoes
  • 250 milliliters low-sodium chicken or vegetable stock
  • 200 milliliters coconut milk
  • 1 small apple (peeled and grated)
  • 50 grams raisins
  • 2 tablespoons fresh coriander (chopped, for garnish)
  • 0.25 teaspoon salt (optional, for seasoning)
  • 300 grams plain cooked rice (to serve)

Directions

Step 1

Heat the sunflower oil in a large saucepan or casserole dish over medium heat.
