  • 2 pounds ground beef (80/20)
  • 0.5 pounds ground pork
  • 1 cup breadcrumbs
  • 0.75 cup milk
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 large eggs
  • 1.5 tablespoons Worcestershire sauce
  • 2 tablespoons ketchup (for the meat mixture)
  • 2 tablespoons parsley, chopped
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 cup ketchup (for the glaze)
  • 2 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup.

Step 2

In a large bowl, combine the breadcrumbs and milk. Let sit for 5 minutes to allow the breadcrumbs to soak up the liquid.

Add the ground beef, ground pork, chopped onions, minced garlic, eggs, Worcestershire sauce, 2 tablespoons of ketchup, parsley, salt, pepper, and paprika to the breadcrumb mixture.

Using clean hands or a large spoon, gently mix the ingredients until just combined. Be careful not to overmix, as it can make the meatloaf dense.

Transfer the meat mixture to the prepared baking sheet. Shape it into a loaf approximately 9 inches long and 4 inches wide.

After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top. Return it to the oven and bake for an additional 15 minutes.

Step 10

Check the internal temperature of the meatloaf using a meat thermometer. It should read 160°F (71°C). If it hasn’t reached this temperature, continue baking in 5-minute increments.

Step 11

Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.

Slice and serve warm with your favorite sides, such as mashed potatoes or steamed vegetables.
