Ingredients

  • 4 pieces Italian sausages
  • 2 medium Potatoes
  • 1 large Green bell pepper
  • 1 large Red bell pepper
  • 1 medium Yellow onion
  • 2 small Garlic cloves
  • 3 tablespoons Olive oil
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 4 pieces Hoagie rolls
  • 4 pieces Provolone cheese slices

Directions

Step 1

Peel the potatoes and cut them into small, uniform cubes of about ½ inch. Set aside.

Step 2

Slice the green and red bell peppers into thin strips, and chop the onion into thin slices. Mince the garlic.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until golden and crisp. Sprinkle with a pinch of salt and set the potatoes aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Toss in the bell peppers and onions, and sauté for 5-7 minutes until softened. Add the minced garlic, Italian seasoning, remaining salt, and black pepper. Cook for an additional minute, then transfer the pepper-onion mixture to another dish and keep warm.
