Ingredients

  • 3 cups Old-fashioned rolled oats
  • 1 cup Slivered almonds
  • 1 cup Pecans, chopped
  • 0.5 cup Pumpkin seeds (pepitas)
  • 0.5 cup Sunflower seeds
  • 0.5 cup Shredded unsweetened coconut
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Maple syrup
  • 0.5 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 1 cup Dried cranberries
  • 0.5 cup Raisins

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, slivered almonds, chopped pecans, pumpkin seeds, sunflower seeds, shredded coconut, ground cinnamon, and salt. Mix well to ensure an even distribution of ingredients.

Step 3

In a separate small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until smooth.

Step 4

Pour the wet mixture over the dry ingredients and stir thoroughly to evenly coat the oat mixture.

Step 5

Spread the granola mixture evenly onto the prepared baking sheet, pressing it down gently with a spatula for clumpier granola.

Step 6

Bake in the preheated oven for 25-30 minutes, stirring halfway through for even browning. Keep a close eye near the end to avoid burning.

Step 7

Once the granola is golden brown and fragrant, remove it from the oven and allow it to cool completely on the baking sheet. This will help it crisp up as it cools.

Step 8

Once cooled, stir in the dried cranberries and raisins.

Step 9

Store the granola in an airtight container at room temperature for up to 2 weeks. Serve with milk, yogurt, or enjoy it as a snack on its own!
