Ingredients

  • 3 lbs beef chuck roast
  • 1 cup red wine
  • 2 cups beef broth
  • 1 tbsp fresh ginger
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 4 pieces garlic cloves
  • 1 large onion
  • 4 pieces carrots
  • 4 medium potatoes
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp cornstarch
  • 2 tbsp water

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Step 2

Season the beef chuck roast with salt and black pepper on both sides.

Step 3

Sear the roast in the skillet for 2-3 minutes per side until browned. Remove from skillet and set aside.

Step 4

Peel the onion and slice it into thick rings. Peel and chop the carrots into large chunks. Wash and quarter the potatoes.

Mince the garlic and grate the fresh ginger if not pre-prepared.

In a small bowl, mix the red wine, beef broth, soy sauce, brown sugar, grated ginger, and minced garlic. Stir to combine.

Place the sliced onion in the bottom of the crock pot, followed by the seared chuck roast.
