Separate the egg yolks from the whites, placing the yolks into a medium-sized mixing bowl. Save the whites for another use or discard them.
Add the granulated sugar to the egg yolks and whisk vigorously until the mixture is pale yellow and creamy, about 1-2 minutes.
In a medium saucepan, combine the whole milk, heavy cream, vanilla extract, and ground nutmeg. Slowly heat over medium-low heat until the mixture is steaming but not boiling, stirring occasionally to avoid scalding.
