Ingredients

  • 12 oz spaghetti or Chinese wheat noodles
  • 3 tbsp soy sauce
  • 1.5 tbsp sesame oil
  • 1.5 tbsp rice vinegar
  • 2 tbsp peanut butter or tahini
  • 1 tbsp honey or maple syrup
  • 2 cloves fresh garlic, minced
  • 1 tsp fresh ginger, minced
  • 0.5 tsp red pepper flakes
  • 2 tbsp water or vegetable broth
  • 3 stalks green onions, thinly sliced
  • 2 tbsp sesame seeds, toasted
  • 1 medium cucumber, julienned (optional)
  • 1 cup shredded carrots (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti or Chinese wheat noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

In a medium bowl, whisk together the soy sauce, sesame oil, rice vinegar, peanut butter or tahini, honey or maple syrup, minced garlic, minced ginger, red pepper flakes, and water or vegetable broth until smooth and well combined. Adjust to taste if needed.

Step 3

In a large mixing bowl, toss the cooled noodles with the sesame sauce until evenly coated.

Step 4

Transfer the noodles to a serving dish or individual bowls.

Step 5

Top the noodles with thinly sliced green onions and toasted sesame seeds. Add julienned cucumber and shredded carrots, if using, for extra freshness and crunch.

Step 6

Serve immediately or chill in the refrigerator for an hour if you prefer the noodles cold.

Step 7

Enjoy Mika's Sesame Noodles as a standalone dish, or pair them with your favorite protein for a more substantial meal.
