Ingredients

  • 4 large Flour tortillas
  • 1 pound Ground beef
  • 2 tablespoons Taco seasoning
  • 1 can (16 oz) Refried beans
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 3 tablespoons Vegetable oil
  • 1 cup Diced tomatoes
  • 0.5 cup Sliced black olives
  • 0.5 cup Chopped green onions
  • 0.5 cup Sour cream
  • 0.25 cup Fresh cilantro
  • 2 tablespoons Hot sauce

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spatula, about 5-7 minutes.

Step 3

Stir in taco seasoning and 2 tablespoons of water. Cook for another 2-3 minutes, ensuring the beef is well-coated in seasoning. Remove from heat and set aside.

Step 4

In a small saucepan, warm up the refried beans over low heat, stirring occasionally until smooth and spreadable. Set aside.

Step 5

In a large skillet, heat the remaining 2 tablespoons of vegetable oil over medium heat. Lightly fry each flour tortilla for about 1-2 minutes per side until crisp and golden. Place them on a baking sheet lined with parchment paper.

Step 6

Spread a thin layer of refried beans on each tortilla. Then, evenly distribute the seasoned ground beef over the beans.

Step 7

Sprinkle shredded cheddar and Monterey Jack cheese on top of the beef layer.

Step 8

Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is fully melted and bubbly.

Step 9

Remove from the oven and garnish with diced tomatoes, sliced black olives, and chopped green onions.

Step 10

Finish with dollops of sour cream, a sprinkle of fresh cilantro, and a drizzle of hot sauce if desired.

Step 11

Slice into quarters and serve immediately. Enjoy your Mexican Pizza!
