Ingredients

  • 8 ounces Elbow macaroni
  • 2 cups Low-fat milk (1% or skim)
  • 1.5 cups Shredded reduced-fat sharp cheddar cheese
  • 2 tablespoons Grated Parmesan cheese
  • 2 tablespoons Low-fat cream cheese
  • 2 tablespoons All-purpose flour
  • 1 tablespoon Unsalted butter
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Mustard powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 spray (as needed) Cooking spray

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, whisking constantly, to create a roux.

Step 3

Gradually whisk in the low-fat milk, a little at a time, to ensure the mixture stays smooth. Continue cooking and whisking until the sauce thickens, about 3–4 minutes.

Step 4

Reduce the heat to low and add the cream cheese, garlic powder, mustard powder, salt, and black pepper. Stir until the cream cheese is fully melted and the mixture is smooth.

Step 5

Slowly stir in the shredded cheddar cheese and Parmesan cheese, a handful at a time, until all the cheese is melted and the sauce is creamy.

Step 6

Coat a baking dish lightly with cooking spray. Combine the cooked macaroni and cheese sauce in the dish, mixing until the macaroni is evenly coated.

Step 7

Optional: For a golden crust, place the dish under the broiler for 2–3 minutes, watching closely to avoid burning.

Step 8

Serve immediately and enjoy Mika's Low Fat Macaroni and Cheese!
