Ingredients

  • 1 whole Cauliflower (medium head)
  • 200 grams Cherry tomatoes
  • 1 whole Cucumber (medium)
  • 1 whole Red onion (small)
  • 20 grams Fresh parsley
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 tablespoon Olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Remove the leaves and core from the cauliflower. Break it into small florets.

Step 2

Bring a pot of salted water to a boil. Add the cauliflower florets and blanch them for 3-4 minutes until slightly tender but still crisp. Drain and rinse immediately under cold water to stop cooking. Set aside to cool.

Step 3

While the cauliflower cools, halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.

Step 4

Roughly chop the fresh parsley and set aside for garnish.

In a small mixing bowl, whisk together the lemon juice, olive oil, Dijon mustard, minced garlic, salt, and black pepper to make the dressing.
