Ingredients

  • 4 cups broccoli florets
  • 3 cups cooked white rice
  • 4 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 cup panko breadcrumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.

Step 2

Bring a pot of salted water to a boil and blanch the broccoli florets for 3 minutes. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes to form a roux.

Step 4

Gradually whisk in the milk and chicken broth, making sure there are no lumps. Cook and stir until the mixture thickens, about 3-4 minutes.

Step 5

Remove the saucepan from heat and stir in 1.5 cups of shredded cheddar cheese until melted and smooth. Add the salt, black pepper, onion powder, and garlic powder, then mix well.

Step 6

In a large bowl, combine the cooked rice, blanched broccoli, and cheese sauce. Mix until everything is evenly coated.

Step 7

Pour the mixture into the prepared casserole dish and spread it out evenly.

Step 8

In a small bowl, mix the panko breadcrumbs with olive oil. Sprinkle the breadcrumb mixture evenly over the top of the casserole, followed by the remaining 0.5 cup of shredded cheddar cheese.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden and crispy.

Step 10

Allow the casserole to cool for 5 minutes before serving.
