Ingredients

  • 2 jars (12 oz each) Marinated artichoke hearts
  • 1 medium, finely chopped Onion
  • 2 minced Garlic cloves
  • 4 large Eggs
  • 1 cup, grated Parmesan cheese
  • 1 cup, shredded Monterey Jack cheese
  • 0.5 cup Panko breadcrumbs
  • 2 tablespoons, chopped Fresh parsley
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking dish with parchment paper for easy removal.

Step 2

Drain the marinated artichoke hearts, reserving 2 tablespoons of the marinade. Chop the artichoke hearts into small bite-sized pieces.

Step 3

Heat a skillet over medium heat and add the reserved artichoke marinade. Sauté the chopped onion for 3-4 minutes until soft, then add the minced garlic and sauté for another minute. Remove from heat and let cool slightly.

Step 4

In a large mixing bowl, whisk together the eggs. Add the Parmesan cheese, Monterey Jack cheese, panko breadcrumbs, parsley, oregano, salt, and black pepper. Mix until combined.

Fold the sautéed onion mixture and the chopped artichoke hearts into the egg and cheese mixture until evenly distributed.
