Ingredients

  • 4 corn tortillas
  • 4 large eggs
  • 2 tablespoons milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons vegetable oil
  • 0.5 cups onion, finely diced
  • 1 jalapeño, finely chopped
  • 0.5 cups tomato, diced
  • 0.5 cups cheddar cheese, shredded
  • 2 tablespoons cilantro, chopped
  • 1 lime, cut into wedges
  • 4 flour or corn taco-sized tortillas

Directions

Step 1

Cut 2 of the corn tortillas into 1-inch strips or small squares.

Step 2

Heat 1 tablespoon of vegetable oil in a large nonstick skillet over medium heat. Add the tortilla strips and cook, stirring occasionally, until they are crisp and golden brown. Remove and set aside on a paper towel-lined plate.

Step 3

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until thoroughly combined. Set aside.

Step 4

In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add the diced onion and jalapeño. Cook for 3-4 minutes until softened.
