Ingredients

  • 120 grams unsalted butter
  • 150 grams dark chocolate (70% cocoa)
  • 100 grams granulated sugar
  • 50 grams brown sugar
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 80 grams all-purpose flour
  • 20 grams unsweetened cocoa powder
  • 0.5 teaspoon salt
  • 1 teaspoon instant espresso powder
  • 120 ml heavy cream
  • 20 grams powdered sugar

Directions

Step 1

Preheat your oven to 180°C (356°F). Line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal later.

Step 2

In a medium-sized, microwave-safe bowl, combine the unsalted butter and dark chocolate. Microwave in 30-second intervals, stirring after each, until melted and smooth. Let it cool slightly.

Step 3

Whisk in granulated sugar and brown sugar until fully combined and glossy.

Step 4

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Sift in the flour, cocoa powder, salt, and half of the espresso powder. Fold gently with a spatula until just combined, being careful not to overmix.

Step 6

Pour the batter evenly into the prepared baking pan and smooth the top with a spatula. Bake for 18-20 minutes or until the top is set but the center is slightly fudgy. Avoid overbaking.

Step 7

While the dessert cools, prepare the espresso cream. In a small bowl, whisk together the heavy cream, powdered sugar, and remaining espresso powder until soft peaks form.

Step 8

Once the dessert is completely cool, slice into squares and serve with a dollop of espresso cream on top.

Step 9

Enjoy your Midnight Madness warm with a glass of milk or a late-night espresso!
