Ingredients

  • 3 medium zucchini
  • 2 tablespoons extra virgin olive oil
  • 2 large garlic cloves

  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons Greek yogurt (optional)
  • 2 tablespoons fresh parsley
  • 0.25 teaspoon ground paprika

Directions

Step 1

Wash the zucchinis thoroughly and trim the ends. Cut them into 1/2-inch thick slices.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the zucchini slices and cook for about 10-12 minutes, stirring occasionally, until they are soft and slightly golden.
