Ingredients

  • 1 medium head Cauliflower
  • 2 cups Water
  • 1.5 cups White vinegar
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Kosher salt
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cumin
  • 2 whole Bay leaves
  • 4 whole Garlic cloves
  • 0.5 teaspoon Chili flakes
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Coriander seeds
  • 4 sprigs Fresh dill

Directions

Step 1

Rinse the cauliflower under cold water and cut it into small florets, discarding the hard stem.

Step 2

In a medium saucepan, combine the water, white vinegar, granulated sugar, kosher salt, turmeric, and cumin. Bring the mixture to a boil, stirring to dissolve the sugar and salt.

Step 3

Reduce the heat to low and simmer the brine for 2 minutes to meld the flavors.

Step 4

While the brine simmers, prepare a clean, heatproof glass jar (about 1 quart capacity). Add the bay leaves, garlic cloves, chili flakes, mustard seeds, coriander seeds, and fresh dill sprigs to the jar.

Step 5

Pack the cauliflower florets tightly into the jar, leaving about 1/2 inch of space at the top.

Step 6

Pour the hot brine over the cauliflower, ensuring all florets are submerged. Tap the jar gently on the counter to release air bubbles.

Step 7

Seal the jar with a lid and let it cool to room temperature. Once cooled, refrigerate the jar for at least 24 hours to allow the flavors to develop.

Step 8

Serve as a crunchy and tangy side dish, or use it to elevate sandwiches, grain bowls, or Middle Eastern-inspired meals.

Step 9

Store in the refrigerator for up to 3 weeks.
