  • 1 unit Cinnamon stick
  • 2 tablespoons Tomato paste
  • 4 cups Vegetable broth
  • 2 cups Cooked chickpeas (or canned, drained and rinsed)
  • 0.75 cup Basmati rice, rinsed and drained
  • 1 medium Carrot, diced
  • 1 medium Zucchini, diced
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 5-7 minutes until softened and golden brown.

Stir in the minced garlic, ground cumin, ground coriander, turmeric powder, smoked paprika, and cinnamon stick. Cook for 1 minute until the spices are fragrant.
