Directions

Step 1

Peel and dice the russet potatoes into small cubes (approximately 1/2-inch). Place them in a large microwave-safe bowl.

Finely chop the yellow onion and mince the garlic cloves.

Add the butter, chopped onion, and garlic to the bowl with the potatoes. Cover the bowl loosely with microwave-safe plastic wrap or a vented lid.
