  • 4 pieces boneless, skinless chicken breasts

  • 1 cup heavy cream
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

In a large microwave-safe dish, add the olive oil and butter. Microwave on high for 1 minute, or until the butter is melted.

Add the seasoned chicken breasts to the dish and microwave on high for 6 minutes, turning the chicken over halfway through cooking.
